Gebratener Skrei mit Zitronenbutter & Wintergemüse
Kochutensilien
- 1 Pfanne für den Fisch
- 1 Topf für das Gemüse
- 1 Kleiner Topf für die Zitronenbutter
- 1 Schneidebrett & Messer
Zutaten
Für den Skrei:
- 2 Skrei-Filets (je ca. 180 g)
- 2 EL Olivenöl
- 1 TL Butter
- Salz & weißer Pfeffer
Für die Zitronenbutter:
- 50 g Butter
- 1 TL Zitronensaft
- 1 TL Zitronenschale (abgerieben)
- 1 TL gehackte Petersilie
Für das Wintergemüse:
- 150 g Rosenkohl (halbiert)
- 1 Karotte (in feine Streifen geschnitten)
- 1 Pastinake (in Würfel geschnitten)
- 1 EL Olivenöl
- Salz & Pfeffer
Zubereitung
- Wintergemüse zubereiten:Rosenkohl, Karotte & Pastinake in Salzwasser blanchieren, dann in Olivenöl anbraten.
- Zitronenbutter herstellen:Butter schmelzen, Zitronensaft, Zitronenschale & Petersilie einrühren.
- Skrei braten:Fischfilets in Olivenöl & Butter bei mittlerer Hitze 2-3 Minuten pro Seite braten, bis sie goldbraun sind.
- Anrichten:Skrei mit Zitronenbutter beträufeln & mit Wintergemüse servieren.
