Leichter Linsensalat mit Erdbeeren & Minze
Kochutensilien
- 1 Kleiner Kochtopf
- 1 Salatschüssel
- 1 Schneidebrett & Messer
- 1 Zitronenpresse
- 1 Sieb
Zutaten
Für den Salat:
- 100 g Berglinsen
- 150 g frische Erdbeeren
- 1 kleines Bund Minze
- 80 g Feta zerbröselt
- 1 kleine rote Zwiebel fein gewürfelt
Für das Dressing:
- Saft einer halben Zitrone
- 2 EL Olivenöl
- Salz & Pfeffer nach Geschmack
- Optional: 1 TL Honig

Zubereitung
- Linsen kochen:
- Linsen in einem Sieb abspülen und in leicht gesalzenem Wasser ca. 20 Minuten gar, aber bissfest kochen. Anschließend abgießen und abkühlen lassen.
Zutaten vorbereiten:
- Erdbeeren waschen, vom Grün befreien und vierteln.
- Minze fein hacken, Feta zerbröseln, Zwiebel fein würfeln.
Salat anrichten:
- In einer großen Schüssel alle Zutaten mit dem Dressing aus Zitronensaft, Olivenöl, Salz, Pfeffer und ggf. etwas Honig vermengen.
- Mit frischer Minze garnieren und sofort servieren.
