Cooking utensils

  • 1 Pan for the fish
  • 1 Small pot for the pea puree
  • 1 Small pan for the onions
  • 1 Hand blender or potato masher

Ingredients
  

For the fried cod:

  • 2 Cod fillets (approx. 180 g each)
  • 1 EL Butter
  • 1 EL Olive oil
  • Salt & pepper
  • 1 TL Lemon juice

For the pea puree:

  • 200 g Peas (fresh or frozen)
  • 1 EL Butter
  • 50 ml Vegetable broth
  • 1 TL Lemon juice
  • Salt & pepper

For the caramelized onions:

  • 1 large red onion (cut into thin rings)
  • 1 EL Butter
  • 1 TL brown sugar
  • 1 TL Balsamic vinegar

Preparation
 

  • Fry the cod:
    Season the fish fillets with salt and pepper and fry in a hot pan with butter and olive oil. Fry for 2-3 minutes per side until golden brown .
    Drizzle with lemon juice & leave to rest briefly.
  • Prepare the pea puree:
    Peas in vegetable stock approx. Cook for 5 minutes until soft .
    Puree with butter & lemon juice, season with salt & pepper.
  • Prepare the caramelized onions:
    Onion rings in butter Sweat for 3-5 minutes .
    Add sugar & balsamic vinegar & Caramelize for a further 5 minutes .
  • Arrange & serve:
    Spread the pea puree on a plate and place the cod on top.
    Garnish with caramelized onions & serve with garnish.
