🍷 Perfect wine pairing with fried cod with pea puree
Why is this dish a challenge for wine pairing?
Cod is a delicate, slightly sweet fish that does not tolerate wines that are too dominant. The pea puree adds a fresh sweetness, while the caramelised onions add a slight umami note.
➡ The perfect wine must have balanced acidity & fine fruit flavours so as not to overpower the dish, but to accompany it harmoniously.
1. sauvignon blanc (Loire, France or New Zealand)
✔ Why does it fit perfectly?
- Citrus & herbal notes go well with the peas
- Fresh acidity balances out the sweetness of the onions
- Minerality emphasises the fine texture of the cod
➡ Tip: A Sancerre or Marlborough Sauvignon Blanc is a great choice.
2. Grüner Veltliner (Austria)
✔ Why does Grüner Veltliner work so well?
- Crisp freshness & peppery seasoning harmonise with the cod
- Light herbal & apple flavours go well with the pea puree
- Medium acidity supports the flavours of the caramelised onions
➡ Tip: A Grüner Veltliner Smaragd from the Wachau brings more depth to the pairing.
3. chardonnay (France or California)
✔ Why is Chardonnay an exciting alternative?
- Creamy texture supports the pea puree
- Elegant fruit & subtle woody notes complement the onions
- Mild acidity goes well with the roasted flavour of the fish
➡ Tip: A Chablis or a light Californian Chardonnay without heavy ageing in wood is ideal.
