Ingredients
  

For the lamb shank:

  • 2 Lamb shanks
  • 2 EL Olive oil
  • 2 Onions
  • 2 Garlic cloves
  • 2 Carrots
  • 500 ml strong red wine (e.g. Syrah or Bordeaux)
  • 250 ml Lamb or beef stock
  • 1 EL Tomato paste
  • 1 TL Rosemary
  • 1 TL Thyme
  • 1 Bay leaf
  • Salt & pepper

For the herb polenta:

  • 100 g Polenta
  • 300 ml Milk
  • 30 g Butter
  • 30 g Parmesan (grated)
  • 1 TL chopped rosemary
  • 1 TL chopped thyme
  • Salt & pepper

Preparation
 

  • Prepare the lamb shank: Remove the tendons from the meat and season with salt and pepper.
  • Sear: Heat the olive oil in a casserole, sear the lamb shanks, then remove.
  • Roast the vegetables: sauté the onions, carrots & garlic in the same pan, add the tomato purée.
  • Deglaze: Deglaze with red wine & add stock.
  • Braising: Add the lamb shanks, rosemary & bay leaf, braise for 3 hours at 140°C.
  • Prepare the polenta: Heat the milk, stir in the polenta, add the butter and herbs, fold in the Parmesan.
  • Serve: Serve the lamb shanks with sauce & herb polenta.
